Regarding the route, the Peuceta and Ellenica trails are quite easy from a technical point of view, and I would say this is one of the main aspects to define a secure hiking path (one small exception could be the first stage between Bari and Bitetto, I talk about it here). The trails are well marked, in both directions, so it is really difficult to get lost; there are also all the updated GPS traces downloadable from the official website and usable offline (I wrote this mini guide to GPX files for those who don’t know how to do it).
